This Copycat KFC Coleslaw recipe combines fine-chopped cabbage and a creamy buttermilk-mayo dressing to recreate the famous KFC side dish at home.

Ingredients
  

For the Vegetables
  • 8 cups finely chopped green cabbage (about 1 medium head) Chop as finely as possible.
  • 1/4 cup very finely chopped carrot (about 1 medium carrot) Grate or finely chop.
  • 2 tablespoons minced sweet onion Use sweet onion for best flavor.
For the Dressing
  • 1/3 cup buttermilk Can substitute with milk mixed with vinegar.
  • 1/3 cup whole milk
  • 1/2 cup mayonnaise Full-fat mayonnaise recommended.
  • 3 tablespoons white vinegar
  • 1 tablespoon fresh lemon juice Fresh juice preferred over bottled.
  • 3 tablespoons sugar Adjust based on taste.
  • 1/2 teaspoon salt Add more if needed.
  • 1/4 teaspoon black pepper (freshly ground preferred)

Method
 

Preparation
  1. Chop the cabbage finely, aiming for pieces no larger than a pea.
  2. Peel and finely chop the carrot and minced the sweet onion.
  3. In a small mixing bowl, whisk together all the dressing ingredients until smooth and adjust seasoning.
  4. Pour the dressing over the cabbage mixture and mix thoroughly to coat.
  5. Taste the coleslaw and adjust seasoning as necessary.
  6. Cover and refrigerate for at least 1 hour before serving.
Serving
  1. Serve cold, adjusting seasoning one last time before serving.
