Ingredients
  

For the Pizza Bites
  • 1 cup cottage cheese Full-fat gives the best texture and flavor
  • 1 cup shredded mozzarella cheese Freshly shredded melts better
  • 1/2 cup pizza sauce Choose a flavor you like since it is a key ingredient
  • 1 pinch Italian seasoning
Optional Add-Ins and Toppings
  • as desired mini pepperoni Press on top before baking
  • as desired red pepper flakes Mix in for heat
  • as desired fresh basil Add on top after baking
  • as desired black olives or diced bell pepper Fold into the mixture before portioning
  • as desired extra mozzarella Sprinkle on top before baking

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a medium mixing bowl, combine the cottage cheese, mozzarella, pizza sauce, and Italian seasoning, mixing until uniform.
  3. Taste and adjust seasoning according to your preference.
  4. Use a tablespoon to portion the mixture onto the prepared baking sheet, flattening each portion slightly for even baking.
Baking
  1. Place the baking sheet in the middle rack of the preheated oven and bake for 15 to 20 minutes until golden and bubbly.
  2. If needed, broil on low for 2 minutes for extra crispiness, watching closely.
Serving
  1. Let the bites cool for 3 to 5 minutes on the tray before transferring them to a plate.
  2. Serve warm, optionally with extra pizza sauce for dipping.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat in the oven or air fryer for best results. Freezing is possible, but the texture may change slightly upon thawing.
