Ingredients

  • 1 cup unsalted butter, softened Use room temperature butter for best results.
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs Add eggs one at a time.
  • 1 teaspoon vanilla extract Enhances the overall flavor.
  • 3 cups all-purpose flour Whisk dry ingredients together before mixing.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt To balance sweetness.
  • 1 cup cotton candy, chopped into small pieces Chop just before use to prevent dissolving.
  • 1/2 cup rainbow sprinkles For a festive look.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, mixing until fully incorporated. Then mix in the vanilla extract.
  4. In a medium bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the chopped cotton candy and rainbow sprinkles gently using a rubber spatula.
  7. Using a tablespoon or cookie scoop, portion the dough onto the prepared baking sheet, spacing them about 2 inches apart.
Baking
  1. Bake in the preheated oven for 10 to 12 minutes, until the edges are lightly golden and the centers look slightly underdone.
  2. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For best results, work quickly with the cotton candy to prevent it from dissolving. Store cookies in an airtight container at room temperature for up to 5 days.
