  • 1 lb lean ground beef
  • 1 cup diced onion (about 1 medium onion)
  • 1 tbsp minced garlic (about 3 cloves)
  • 2 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 1 10-ounce can diced tomatoes and chiles
  • 1/4 cup milk
  • 3/4 cup sour cream
  • 1 1/2 cups frozen corn
  • 1 1/2 cups shredded cheddar cheese
  • 1 30-ounce bag frozen tater tots

Method
 

Preparation
  1. Preheat your oven to 400°F.
  2. Heat a large 14-inch skillet over medium-high heat and add ground beef. Cook for 5 to 6 minutes, breaking it apart as it browns, until nearly fully cooked.
  3. Stir in diced onion and minced garlic; cook for another 3 to 4 minutes until the onion softens, then drain excess grease.
  4. Reduce heat to medium and stir in Worcestershire sauce, salt, pepper, diced tomatoes and chiles, milk, and sour cream. Mix until smooth.
  5. Add frozen corn to the beef mixture and stir until evenly distributed.
  6. Pour the mixture into a greased 3-quart baking dish, spreading it into an even layer.
  7. Sprinkle shredded cheddar cheese on top and arrange frozen tater tots in a single layer over the cheese.
Baking
  1. Bake in the preheated oven for 30 to 35 minutes until tater tots are golden brown and crispy.
  2. Let the casserole rest for about 5 minutes before serving.

Notes

Great for meal prep; refrigerate leftovers for up to 4 days. Reheat in the oven or microwave per preference. Can be frozen before or after baking for up to 2 months.
