Preparation
- Preheat your oven to 400°F.
- Heat a large 14-inch skillet over medium-high heat and add ground beef. Cook for 5 to 6 minutes, breaking it apart as it browns, until nearly fully cooked.
- Stir in diced onion and minced garlic; cook for another 3 to 4 minutes until the onion softens, then drain excess grease.
- Reduce heat to medium and stir in Worcestershire sauce, salt, pepper, diced tomatoes and chiles, milk, and sour cream. Mix until smooth.
- Add frozen corn to the beef mixture and stir until evenly distributed.
- Pour the mixture into a greased 3-quart baking dish, spreading it into an even layer.
- Sprinkle shredded cheddar cheese on top and arrange frozen tater tots in a single layer over the cheese.
Baking
- Bake in the preheated oven for 30 to 35 minutes until tater tots are golden brown and crispy.
- Let the casserole rest for about 5 minutes before serving.
Notes
Great for meal prep; refrigerate leftovers for up to 4 days. Reheat in the oven or microwave per preference. Can be frozen before or after baking for up to 2 months.
