  • 4 pieces Chicken breasts, boneless and skinless About 6 ounces each
  • 1/2 cup Cranberry sauce Homemade or canned
  • 4 ounces Brie cheese, rind removed Sliced
  • 2 tablespoons Olive oil For searing
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 teaspoon Dried thyme
  • 1/2 teaspoon Garlic powder
  • 1/2 teaspoon Onion powder

Method
 

Preparation
  1. Preheat your oven to 375°F.
  2. Lay each chicken breast between two sheets of plastic wrap and pound to an even thickness.
  3. Season both sides of each breast with olive oil, salt, pepper, thyme, garlic powder, and onion powder.
  4. Cut a horizontal pocket into the thickest side of each chicken breast, being careful not to cut all the way through.
  5. Stuff each pocket with approximately two tablespoons of cranberry sauce and slices of Brie.
Cooking
  1. Heat an oven-safe skillet over medium-high heat with a splash of olive oil and sear the stuffed chicken breasts seam-side down for about 3 minutes per side.
  2. Transfer the skillet to the preheated oven and bake for 20 to 25 minutes, until the internal temperature reaches 165°F.
  3. Let the chicken rest for 5 minutes before slicing.

Notes

Pound the chicken evenly for juicy results. Don’t overstuff or the filling may leak during cooking. Always check doneness with a thermometer.
