Preparation
- Preheat your oven to 375°F.
- Lay each chicken breast between two sheets of plastic wrap and pound to an even thickness.
- Season both sides of each breast with olive oil, salt, pepper, thyme, garlic powder, and onion powder.
- Cut a horizontal pocket into the thickest side of each chicken breast, being careful not to cut all the way through.
- Stuff each pocket with approximately two tablespoons of cranberry sauce and slices of Brie.
Cooking
- Heat an oven-safe skillet over medium-high heat with a splash of olive oil and sear the stuffed chicken breasts seam-side down for about 3 minutes per side.
- Transfer the skillet to the preheated oven and bake for 20 to 25 minutes, until the internal temperature reaches 165°F.
- Let the chicken rest for 5 minutes before slicing.
Notes
Pound the chicken evenly for juicy results. Don’t overstuff or the filling may leak during cooking. Always check doneness with a thermometer.
