Ingredients
  

For the Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil For searing the chicken
For the Filling
  • 1 cup broccoli florets, finely chopped Fresh or thawed if using frozen
  • 4 ounces cream cheese, softened Softening ahead of time makes mixing easier
  • 1/2 cup shredded cheddar cheese Feel free to substitute with mozzarella or pepper jack
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • to taste Salt and pepper Season to your preference

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Using a sharp knife, carefully cut a pocket into each chicken breast.
  3. In a mixing bowl, combine chopped broccoli, softened cream cheese, cheddar, and Parmesan. Add garlic powder, onion powder, salt, and pepper, mixing until fully combined.
  4. Generously spoon the filling into each chicken pocket, securing openings with toothpicks if necessary.
Cooking
  1. Heat olive oil in an oven-safe skillet over medium-high heat and sear chicken breasts for 3 to 4 minutes on each side until golden brown.
  2. Transfer the skillet to the preheated oven and bake for 25 to 30 minutes, checking for an internal temperature of 165°F (74°C).
  3. Remove the chicken from the oven and let it rest for 5 minutes before slicing to serve.

Notes

Pound thicker chicken breasts for even cooking. Season the outside of the chicken as well. Use a meat thermometer for perfect doneness.
