Cream Puffs

Ingredients
  

For the Cream Puffs
  • 1 cup Butter Unsalted is preferred.
  • 1 cup Water
  • 1 cup All-purpose flour
  • 4 large Eggs
For the Filling
  • 2 boxes Instant vanilla pudding mix Use two small boxes.
  • 2 cups Cold whole milk
  • 1 cup Sour cream
  • powdered sugar Powdered sugar, for dusting on top Dust right before serving.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Make the Dough
  1. Melt the butter in water over medium heat, then bring to a rolling boil.
  2. Reduce heat to low and add flour all at once. Stir vigorously until the dough pulls away from the sides.
  3. Let the mixture cool slightly before adding eggs to prevent scrambling.
  4. Beat in the eggs one at a time until the dough becomes smooth and glossy.
Bake the Puffs
  1. Drop walnut-sized spoonfuls of the dough onto the prepared baking sheet, spacing them apart.
  2. Bake for 20 to 25 minutes until golden and dry, avoiding opening the oven during the first 15 minutes.
  3. Cool completely on a wire rack before filling.
Prepare the Filling
  1. Whisk the pudding mix with cold milk until smooth, then add sour cream and blend until thick.
  2. Refrigerate the filling for at least an hour before using.
Assemble the Cream Puffs
  1. Slice cooled puffs in half and fill generously with the prepared filling.
  2. Dust with powdered sugar right before serving.

Notes

Store unfilled puffs at room temperature for up to 2 days. Refrigerate filled puffs and consume within 2 days for best quality.
