  • 4 pieces boneless, skinless chicken breasts (about 700–800 grams) Fresh chicken breasts cook evenly and stay juicy.
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 teaspoon salt For seasoning the chicken.
  • 1 teaspoon black pepper For seasoning the chicken.
  • 1 teaspoon garlic powder For seasoning.
  • 1 teaspoon onion powder For seasoning.
  • ½ teaspoon paprika
  • 4 cloves garlic, minced
  • 1 small onion, finely diced Adds aroma and flavor.
  • 1 tablespoon all-purpose flour Helps to thicken the sauce.
  • 1 cup chicken broth Adds moisture and flavor.
  • 1 cup heavy cream For a rich, creamy sauce.
  • ½ cup grated Parmesan cheese Use fresh for the best flavor.
  • 1 teaspoon Italian seasoning
  • 1 tablespoon chopped fresh parsley For garnish.
  • ½ teaspoon chili flakes Optional for a little heat.

Method
 

Preparation
  1. Pat the chicken breasts dry using paper towels.
  2. Season both sides generously with the spice mixture (salt, pepper, garlic powder, onion powder, and paprika). Let the chicken rest for about 10 minutes.
Cooking Chicken
  1. Heat olive oil and butter in a large skillet over medium-high heat.
  2. Once the butter melts, add the chicken to the pan, ensuring space between each piece.
  3. Cook each side for about 5-6 minutes until golden brown. Transfer the chicken onto a plate once nearly cooked through.
Cooking Aromatics
  1. Reduce the heat to medium and add the diced onion to the same skillet.
  2. Stir often until soft and slightly golden, then add minced garlic and cook for another minute.
Building the Sauce
  1. Sprinkle flour over the onions and stir continuously for about one minute.
  2. Slowly pour in the chicken broth while whisking, scraping browned bits from the bottom.
  3. Add the heavy cream slowly while stirring, then mix in Parmesan cheese and Italian seasoning.
  4. Let the sauce simmer gently for 5-7 minutes until thickened.
Finishing the Dish
  1. Return the chicken breasts to the skillet and spoon the creamy sauce over them.
  2. Simmer gently for another five minutes until the chicken reaches a safe internal temperature of 74°C (165°F).
  3. Sprinkle chopped parsley across the top before serving.

Notes

For the best sauce, use heavy cream, freshly grated Parmesan, and simmer gently without boiling. Adjust seasoning before serving.
