  • 2 medium carrots, peeled and diced
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 pound cooked chicken, shredded
  • 9 ounces fresh cheese tortellini
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup heavy cream
  • 1/3 cup fresh parsley, chopped

Preparation
  1. Heat the olive oil in a large pot over medium-high heat. Add the chopped onion, celery, and diced carrots, then cook for 5 to 6 minutes until the vegetables soften.
  2. Stir in the minced garlic and cook for 1 minute until fragrant.
  3. Pour in the chicken broth and stir everything together. Bring to a gentle simmer.
  4. Add shredded chicken, fresh tortellini, dried thyme, salt, and black pepper, stirring to distribute evenly.
  5. Simmer for 5 to 7 minutes, until the tortellini is tender.
  6. Stir in heavy cream to achieve a rich, velvety texture.
  7. Add chopped parsley just before serving.
  8. Ladle the soup into bowls and serve hot.
