Coconut Custard Base
  • 1 cup coconut milk Use full-fat for the best texture.
  • 1 cup heavy cream
  • 0.5 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 0.25 cup cornstarch Thickens the custard.
Tart Shell & Toppings
  • 1 pre-made tart shell (store-bought or homemade)
  • 1 cup mixed fresh berries (strawberries, blueberries, raspberries — your call)
  • to taste extra shredded coconut For garnish.
  • to taste fresh mint leaves For garnish.

Method
 

Preparation
  1. In a medium saucepan, combine coconut milk, heavy cream, and sugar. Heat over medium, stirring gently until warm.
  2. In a separate bowl, whisk together eggs, vanilla extract, and cornstarch until smooth.
  3. Temper the egg mixture by slowly adding warm coconut mixture while whisking constantly.
  4. Pour the tempered egg mixture back into the saucepan, stirring constantly over medium heat until thickened.
  5. Allow custard to cool slightly before pouring into the tart shell.
  6. Cover tart and refrigerate for at least 2 hours until set.
Finishing Touches
  1. Top the set custard with fresh berries.
  2. Garnish with shredded coconut and mint leaves.
  3. Serve immediately or keep refrigerated until ready to serve.

Notes

Chill overnight for the best flavor and texture. Store leftovers tightly covered in the fridge for up to 3 days.
