Method

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Using sharp kitchen scissors, cut down the center of the top shell of each lobster tail, stopping near the base.
  3. Gently pull the lobster meat upwards and rest it on top of the shell.
Making the sauce
  1. In a medium pan over medium heat, melt the butter until bubbling.
  2. Add minced garlic and sauté for 1-2 minutes.
  3. Pour in the heavy cream, grated Parmesan, and lemon juice. Stir and let it simmer until thickened.
  4. Season with salt and pepper to taste.
Baking
  1. Arrange the lobster tails on a rimmed baking sheet and spoon the sauce generously over the meat.
  2. Bake in the preheated oven for 15-20 minutes, or until the meat is opaque and firm.
Garnishing and serving
  1. Sprinkle chopped parsley over the lobster tails and arrange lemon wedges alongside.
  2. Serve immediately while warm.

Notes

Thaw frozen lobster tails in the fridge overnight; never at room temperature. Use fresh garlic for better flavor. Avoid overcooking as lobster can turn rubbery.
