Ingredients

Main Ingredients
  • 2 1/2 pounds Yukon Gold potatoes, peeled and cubed Best for a creamy texture.
  • 5 cloves garlic, minced Provides rich garlic flavor.
  • 1/2 cup unsalted butter, softened and divided Butter adds creaminess.
  • 3/4 cup whole milk, warmed Pre-warmed to avoid cooling potatoes.
  • 1/4 cup sour cream Adds tang and creaminess.
  • 1 1/4 teaspoons salt, plus more for the boiling water Essential for seasoning.
  • 1/2 teaspoon black pepper Adds flavor.

Method

Preparation
  1. Peel the Yukon Gold potatoes and cut them into roughly one-inch cubes. Keep the cut pieces in a bowl of cold water.
  2. Transfer the drained potatoes into a large pot, cover with cold water by about an inch, and add a pinch of salt.
Cooking
  1. Bring the pot to a rolling boil, then reduce to a steady simmer for 15 to 18 minutes until fork-tender.
  2. While the potatoes simmer, melt two tablespoons of butter in a small skillet over medium-low heat. Add the minced garlic and cook for about two minutes until fragrant and lightly golden.
Draining and Mashing
  1. Once the potatoes are ready, drain them in a colander and return to the hot pot to dry for one minute over low heat.
  2. Add the remaining softened butter, garlic butter mixture, warmed milk, and sour cream to the pot with the potatoes. Mash until mostly smooth.
  3. Stir in the salt and pepper, adjusting seasoning to preference.
Serving
  1. Serve immediately while warm and creamy.

Notes

For the best results, warm your milk and avoid overworking the potatoes. You can substitute red potatoes or use dairy-free alternatives like unsweetened oat milk.
