Ingredients
  

For the Cream Filling
  • 16 oz 2 packages (8 oz each / 450g total) cream cheese, softened to room temperature Make sure it's at room temperature for smooth mixing.
  • 14 oz 1 can (14 oz / 397g) sweetened condensed milk
  • 1 cup 1 cup (240ml) Mexican crema or sour cream
  • 1 teaspoon 1 teaspoon pure vanilla extract
  • 2 tablespoons 2 tablespoons fresh lime juice
For the Cookie Layers
  • 28 oz 2 packages (14 oz each / about 400g total) Maria cookies These can be found in the Latin foods aisle.
  • 1 cup 1 cup (240ml) fresh lime juice (for dipping, about 6 to 8 limes) Freshly squeezed works best.
  • 1/2 cup 1/2 cup (120ml) water, mixed with the lime juice
Now For the Strawberry Layer
  • 2 pounds 2 pounds (900g) fresh strawberries, washed and hulled Choose ripe strawberries for better flavor.
  • 3 tablespoons 3 tablespoons granulated white sugar This helps sweeten the strawberries.
  • 1 tablespoon 1 tablespoon fresh lime juice
For Topping
  • optional Extra fresh strawberries, sliced, for garnish
  • optional A light dusting of crushed Maria cookies or powdered sugar

Method
 

Preparation of Strawberries
  1. Slice the strawberries into thin, even pieces and mix with sugar and lime juice in a bowl. Let sit for 15-20 minutes to macerate.
Make the Cream Filling
  1. In a large bowl, beat the softened cream cheese until smooth, about 2 minutes.
  2. Slowly mix in the sweetened condensed milk until well combined, then add the Mexican crema, vanilla, and lime juice. Beat until creamy.
Set Up Dipping Station
  1. In a shallow bowl, combine lime juice and water for dipping the cookies.
Build the Layers
  1. Dip each Maria cookie into the lime mixture briefly, then lay them flat in a baking dish.
  2. Spread cream filling over the cookies and add a layer of macerated strawberries.
Repeat Layers
  1. Continue layering cookies, cream filling, and strawberries until all ingredients are used, finishing with cream on top.
Chill
  1. Cover the dish with plastic wrap and chill in the refrigerator for at least 4 hours, or overnight for best results.
Serve
  1. Cut the Carlota into squares and serve with garnish as desired.

Notes

For best results, always use room temperature cream cheese and avoid over-soaking the cookies. You can customize with different fruits or add a layer of Nutella for extra richness.
