Dressing
  • 1 cup Plain Greek yogurt
  • 2 tbsp Apple cider vinegar
  • 2 tbsp Extra-virgin olive oil
  • 1 tbsp Honey
  • 1 tsp Salt Adjust to taste
  • 1 tsp Dijon mustard
  • 1 tbsp Poppy seeds
Salad Components
  • 2 cups Uncooked pasta Penne or rotini recommended
  • 3 cups Chopped romaine lettuce
  • 1 cup Fresh strawberries Sliced
  • 1 cup Crumbled feta cheese
  • 1 medium Diced avocado
  • 1/2 cup Sliced almonds

Method
 

Cooking the Pasta
  1. Bring a large pot of salted water to a rolling boil, then add the pasta.
  2. Cook for 8 to 10 minutes until al dente, stirring occasionally to prevent sticking.
  3. Drain and rinse under cool water to stop the cooking process.
Making the Dressing
  1. In a medium bowl, whisk together Greek yogurt, apple cider vinegar, olive oil, honey, salt, Dijon mustard, and poppy seeds until smooth.
  2. Taste and adjust sweetness or tanginess as needed.
Assembling the Salad
  1. In a large bowl, combine cooled pasta, chopped romaine, strawberries, feta, avocado, and almonds.
  2. Toss gently to avoid mashing the avocado or strawberries.
Final Steps
  1. Pour the dressing over the salad and stir gently until evenly coated.
  2. Cover and chill in the refrigerator for at least 30 minutes before serving.

Notes

Salt pasta water generously for flavor. Rinse pasta to prevent mushiness. Chill salad to enhance flavors. Customize with seasonal ingredients as desired.
