  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 28 ounces crushed tomatoes, 1 can
  • 2 cups vegetable broth
  • 1 teaspoon sugar balances acidity
  • 1 teaspoon dried oregano
  • to taste salt and pepper
  • 1 cup heavy cream
  • 1/2 cup fresh basil, chopped, plus extra for garnish

Method
 

Preparation
  1. In a large pot, warm the olive oil over medium heat. Add the chopped onion and let it soften for about five minutes, stirring occasionally.
  2. Add the minced garlic and cook for one more minute, being careful not to burn it.
Cooking
  1. Pour in the crushed tomatoes and vegetable broth, then stir in the sugar, oregano, salt, and pepper.
  2. Bring the mixture to a gentle simmer and let it bubble for 15 to 20 minutes.
  3. Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.
  4. Stir in the cream and chopped basil, letting it simmer for another five minutes.
Serving
  1. Taste the soup and adjust seasoning with salt or pepper if needed before serving.

Notes

For a roasted version, use fresh tomatoes instead of canned. You can also make it vegan by using coconut milk or cashew cream.
