- In a large pot, warm the olive oil over medium heat. Add the chopped onion and let it soften for about five minutes, stirring occasionally.
- Add the minced garlic and cook for one more minute, being careful not to burn it.
Cooking
- Pour in the crushed tomatoes and vegetable broth, then stir in the sugar, oregano, salt, and pepper.
- Bring the mixture to a gentle simmer and let it bubble for 15 to 20 minutes.
- Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.
- Stir in the cream and chopped basil, letting it simmer for another five minutes.
Serving
- Taste the soup and adjust seasoning with salt or pepper if needed before serving.
Notes
For a roasted version, use fresh tomatoes instead of canned. You can also make it vegan by using coconut milk or cashew cream.
