Ingredients
  

For the Whipped Feta
  • 8 ounces Feta cheese, crumbled
  • 1/4 cup Greek yogurt, plain and full-fat
  • 1 tablespoon Lemon juice, freshly squeezed
For the Marinated Beets
  • 3 pieces Small to medium beets, fresh
  • 2 tablespoons Apple cider vinegar
  • 1 tablespoon Date syrup (honey works as a substitute)
  • 3 tablespoons Olive oil Plus extra for drizzling
For Garnish
  • 1/3 cup Roasted pistachios, roughly chopped
  • 2 tablespoons Fresh dill, chopped
  • 1/2 teaspoon Sea salt Or to taste
  • 1/4 teaspoon Black pepper Or to taste

Method
 

Preparation
  1. Trim the tops off the beets and slice them in half. Add halved beets to a pot of well-salted boiling water.
  2. Simmer the beets for about 20 minutes or until fork-tender, then drain and allow to cool.
  3. Peel the cooled beets and slice them into thin rounds or half-moons.
  4. In a blender or food processor, combine crumbled feta, Greek yogurt, and lemon juice. Blend until smooth and fluffy.
Marinating
  1. In a small bowl, whisk together apple cider vinegar, date syrup, and olive oil until glossy.
  2. Add the sliced beets to the dressing and toss until evenly coated. Allow to marinate for at least 5 minutes.
Assembly
  1. Spread the whipped feta on a serving plate and layer the marinated beets on top.
  2. Garnish with chopped pistachios, fresh dill, a drizzle of olive oil, sea salt, and black pepper.
  3. Serve immediately while the feta is cool and the pistachios crunchy.

Notes

Use fresh, firm beets for better texture. Do not skip the marinating step for best flavor.
