Prepare Crème Anglaise
- Heat the heavy whipping cream in a medium saucepan over medium heat, adding a pinch of salt, until steaming hot but not boiling.
- Whisk the egg yolks and granulated sugar together in a separate bowl until pale and thick.
- Slowly drizzle the hot cream into the egg mixture while whisking constantly to temper the eggs.
- Return the mixture to the saucepan and cook over medium heat, whisking constantly for 3-4 minutes until thickened.
- Stir in the vanilla extract or vanilla paste and set aside.
Prepare French Toast
- Preheat a griddle or skillet over medium heat.
- Whisk together egg yolks, heavy cream, milk, and vanilla in a shallow dish until smooth.
- Soak each slice of brioche in the custard mixture briefly on both sides.
- Melt butter on the griddle and cook the soaked brioche slices until golden brown, flipping once.
- Sprinkle granulated sugar over the cooked slices and caramelize with a kitchen torch or under the broiler.
- Serve immediately with warm crème anglaise poured over the top.
Notes
Best served fresh. For variations, consider adding fresh berries, salted caramel, or crumbled bacon as toppings. Store leftovers in an airtight container for up to 2 days.
