  • 1/2 cup 1/2 cup (115g) unsalted butter
  • 4 oz 4 oz (115g) dark chocolate, chopped (60 to 70 percent cacao recommended)
  • 1 cup 1 cup (200g) granulated white sugar
  • 1/4 cup 1/4 cup (50g) light brown sugar, packed
  • 3 large 3 large eggs, at room temperature
  • 1 teaspoon 1 teaspoon pure vanilla extract
  • 3/4 cup 3/4 cup (95g) all-purpose flour
  • 1/4 cup 1/4 cup (25g) unsweetened cocoa powder
  • 1/2 teaspoon 1/2 teaspoon salt
  • 1/2 cup 1/2 cup (85g) chocolate chips, optional but strongly recommended

Method
 

Preparation
  1. Preheat the oven to 325°F (165°C) and line an 8x8 inch baking pan with parchment paper.
  2. In a medium saucepan over low heat, melt the butter and dark chocolate while stirring constantly until smooth.
  3. In a large mixing bowl, whisk together the granulated and brown sugars with the eggs and vanilla for 2-3 minutes until pale and thick.
  4. Slowly pour the melted chocolate mixture into the egg mixture while whisking continuously.
  5. Sift the flour, cocoa powder, and salt into the batter and gently fold until just combined.
  6. If using, fold in the chocolate chips.
  7. Allow the batter to rest for 10 minutes in the pan.
Baking
  1. Bake in the preheated oven for 25-28 minutes. Test with a toothpick; it should come out with moist crumbs.
  2. Cool the brownies in the pan on a wire rack for at least 1 hour before cutting.

Notes

Make sure to whisk the eggs and sugar thoroughly for the best crinkle effect. For variations, consider adding espresso powder or caramel.
