Preparation
- Scrub and peel the sweet potatoes, then slice off a thin strip along one side to create a flat surface.
- Cut the potatoes into planks about a quarter-inch thick, then stack and slice them into fries of the same thickness.
- Soak the cut fries in a large bowl of cold water for thirty minutes to remove excess starch.
- Drain the fries thoroughly and spread them across a clean kitchen towel, patting them completely dry.
Seasoning and Baking
- In a large mixing bowl, drizzle the dried fries with olive oil and toss until evenly coated.
- Sprinkle salt, pepper, smoked paprika, and garlic powder over the fries and toss again to distribute evenly.
- Preheat your oven to 425°F (220°C). Spread the seasoned fries across a large baking sheet in a single layer without crowding.
- Bake for 20 minutes, then flip each fry carefully for even browning. Continue baking for another 15 to 20 minutes until golden and caramelized.
- Allow the finished fries to rest for five minutes before serving.
