Step 1: Brown the Beef and Build the Filling
- Heat a medium skillet over medium heat and add the ground beef. Cook until browned with small, even crumbles.
- Tilt the pan and carefully spoon off excess grease. Stir in taco seasoning and water and simmer for about four minutes.
Step 2: Shape and Pre-Bake the Tortilla Cups
- Preheat your oven to 375°F and lightly grease a muffin tin.
- Brush each tortilla lightly with olive oil and press them into the muffin cups to form bowls.
- Bake for 8-10 minutes until golden around the edges.
Step 3: Fill, Top, and Bake Again
- Once the shells are baked, fill each cup with about two tablespoons of the beef filling.
- Sprinkle cheddar cheese on top and return to the oven for 3-5 minutes until melted.
Step 4: Top and Serve Immediately
- Add the diced tomatoes, shredded lettuce, sour cream, and salsa on top of the cups and serve warm.
Notes
For sturdier cups, double up the tortillas. Keep the oven warm while assembling to reheat if needed. Store leftovers in an airtight container in the fridge for up to two days.
