  • 3 pounds Yellow potatoes, scrubbed and quartered
  • 1 medium Yellow onion, diced
  • 14 ounces Smoked turkey sausage, sliced
  • 2 cans (14.5 ounces each) Cut green beans, canned and drained
  • 1 stick (8 tablespoons) Unsalted butter
  • 1 packet (about 1 ounce) Italian dressing seasoning mix
Seasonings
  • 1 teaspoon Salt Plus more to taste
  • 1/2 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Smoked paprika

Method
 

Preparation
  1. Scrub the yellow potatoes well, then quarter them into bite-sized chunks.
  2. Toss the potato chunks in a large bowl with salt, black pepper, garlic powder, onion powder, and smoked paprika. Coat thoroughly.
Layering
  1. Place the seasoned potatoes in the bottom of the slow cooker.
  2. Add the diced onion evenly over the potatoes.
  3. Lay the sliced smoked sausage on top of the onions.
  4. Pour the drained green beans over the mixture.
Cooking
  1. Place the full stick of unsalted butter on top of the layered ingredients.
  2. Sprinkle the Italian dressing seasoning mix over the top.
  3. Cover and cook on low for 6 to 7 hours, or high for 3 to 4 hours.
Finishing Touch
  1. After cooking, check doneness by poking a potato chunk with a fork; if it slides in easily, it is ready.
  2. Stir everything once done and serve hot in bowls.

Notes

For best results, cut potato pieces uniformly and avoid stirring early. Store leftovers in an airtight container for up to three days.
