Method
Marinating the Chicken
- In a large bowl or zip-top bag, place the chicken thighs and pour the dill pickle juice over them, ensuring each piece is fully covered. Seal and refrigerate for at least 8 hours, preferably 24 for better flavor.
Preparing Seasoning
- In a small bowl, combine kosher salt, black pepper, garlic powder, onion powder, and paprika. Stir to mix and then sprinkle generously over the marinated chicken, rubbing it in thoroughly.
Oven Preparation
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
Baking the Chicken
- Place the seasoned chicken thighs on the prepared baking sheet, spacing them apart to allow proper roasting. Brush half a cup of dill pickle ranch dressing on top of each piece.
- Bake in the preheated oven for 18 to 25 minutes, checking for doneness with a meat thermometer (165°F internally).
Rest and Serve
- Allow the chicken to rest for 5 minutes after baking before serving. Garnish with fresh dill and serve alongside reserved ranch dressing.
Notes
