Preparation
- Preheat oven to 350°F (175°C) and line a 9x13 inch baking pan with foil, spraying it with cooking spray.
- In a medium bowl, whisk together the oil, sugar, and vanilla extract until smooth and slightly glossy.
- In another bowl, combine the flour, cocoa powder, baking soda, and salt. Whisk thoroughly.
- Pour the wet mixture into the dry ingredients and stir until just combined.
- Fold in the shredded zucchini until fully incorporated.
- Add chocolate chips and distribute evenly throughout the batter.
Baking
- Spread the batter evenly into the prepared pan and bake for about 25 minutes until edges pull away and center is set.
- Allow to cool completely in the pan before frosting.
Frosting
- In a bowl, whisk together the cocoa powder, powdered sugar, and melted butter until combined.
- Add milk and vanilla extract, then mix until smooth and creamy.
- Spread frosting evenly over cooled brownies.
Notes
Cool fully before slicing to avoid a gooey mess; these brownies taste better the next day.
