Main ingredients
  • 1 pound Ground beef (or ground turkey) Ground turkey works great for a lighter option.
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 4 medium Potatoes, thinly sliced Slice about a quarter-inch thick.
  • 2 medium Carrots, sliced
  • 1 14.5 oz can Green beans, drained
  • 1 10.5 oz can Cream of mushroom soup
  • 1/2 cup Milk
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 teaspoon Italian seasoning
  • 1 1/2 cups Shredded cheddar cheese Alternatively, use pepper jack for a spicy kick.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Slice your potatoes thin, about a quarter-inch thick.
Cooking
  1. In a large skillet over medium heat, brown the ground beef with the chopped onion and minced garlic for 7 to 9 minutes, breaking apart the meat as it cooks.
  2. Drain off excess grease.
  3. In a large mixing bowl, combine the browned meat mixture, sliced potatoes, sliced carrots, drained green beans, cream of mushroom soup, milk, salt, pepper, and Italian seasoning. Mix well.
  4. Grease a 9x13-inch baking dish and pour in the mixed ingredients evenly.
  5. Cover the dish tightly with foil and bake for 45 minutes.
  6. Remove the foil, sprinkle shredded cheddar cheese on top, and bake uncovered for an additional 15 minutes.
  7. Allow to rest for 5 to 10 minutes before serving.

Notes

Slice potatoes evenly for consistent cooking. Drain the meat fully to prevent a greasy casserole. You can prep the mixture the night before for a quick dinner.
