Preparation
- Set your butter and eggs out for about 45 minutes to reach room temperature.
- Separate the egg yolks from the whites.
- In a mixing bowl, beat the softened butter and granulated sugar together until light and fluffy.
- Add the rum extract and egg yolks, mixing until smooth.
- Mix in flour, baking powder, cinnamon, nutmeg, salt, and eggnog until just combined.
- Scoop the dough into balls and place on a prepared baking sheet.
Baking
- Bake the cookies at 350°F for 11 to 13 minutes until set but still pale in the center.
- Cool the cookies on a wire rack.
Icing
- Combine powdered sugar and ground nutmeg in a bowl.
- Briefly warm the eggnog and whisk it into the sugar mixture until smooth.
- Drizzle the icing over the cooled cookies.
