  • 8 ounces bittersweet chocolate, chopped Use quality chocolate for best flavor.
  • 1/2 cup neutral oil
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1/4 cup Dutch process cocoa powder
  • 1 tablespoon black cocoa powder, optional Can be omitted.
  • 1 1/2 teaspoons espresso powder Enhances chocolate flavor.
  • 1/2 teaspoon salt
  • 1/2 cup bittersweet chocolate, chopped, for folding in

Method
 

Preparation
  1. Preheat the oven to 350°F and grease a mini muffin pan with softened butter.
  2. Melt the chopped bittersweet chocolate and neutral oil together in a heatproof bowl set over simmering water until smooth.
  3. In a large mixing bowl, beat the granulated sugar, brown sugar, and eggs on high speed for about 5-6 minutes until pale and thick.
  4. Pour the melted chocolate mixture into the egg mixture slowly, while mixing on low speed until glossy and combined.
  5. Fold in the flour, Dutch process cocoa powder, black cocoa powder (if using), espresso powder, and salt until just combined.
  6. Gently fold in the remaining chopped bittersweet chocolate.
  7. Fill each muffin cup about three-quarters full with batter and bake for 15 to 18 minutes.
  8. Let the brownie bites cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Store cooled brownie bites in an airtight container at room temperature for up to three days. For longer storage, freeze in a sealed container for up to a month. Thaw at room temperature for about twenty minutes before serving.
