Preparation
- Preheat the oven to 350°F and grease a mini muffin pan with softened butter.
- Melt the chopped bittersweet chocolate and neutral oil together in a heatproof bowl set over simmering water until smooth.
- In a large mixing bowl, beat the granulated sugar, brown sugar, and eggs on high speed for about 5-6 minutes until pale and thick.
- Pour the melted chocolate mixture into the egg mixture slowly, while mixing on low speed until glossy and combined.
- Fold in the flour, Dutch process cocoa powder, black cocoa powder (if using), espresso powder, and salt until just combined.
- Gently fold in the remaining chopped bittersweet chocolate.
- Fill each muffin cup about three-quarters full with batter and bake for 15 to 18 minutes.
- Let the brownie bites cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Store cooled brownie bites in an airtight container at room temperature for up to three days. For longer storage, freeze in a sealed container for up to a month. Thaw at room temperature for about twenty minutes before serving.
