- Taste the sauce. Adjust saltiness with lime or smoothness with sesame oil as needed.
Steaming Setup
- Fill a large pot with about an inch of water and place a steaming rack inside. Bring the water to a gentle simmer over medium heat.
- Ensure the water does not touch the fish directly.
Layering
- Place the seasoned fish fillets on a heatproof plate that fits inside your steamer. Tuck ginger slices around the fish.
- Pour the whisked sauce evenly over the fillets.
Steaming
- Lower the plate onto the steaming rack, cover the pot with a tight-fitting lid, and steam for 8 to 10 minutes.
- Check doneness by testing with a fork; the fish should flake easily.
Garnishing
- Carefully lift the plate out of the steamer using oven mitts.
- Scatter the sliced red chili and chopped coriander over the top while warm. Arrange lime wedges on the side.
Serving
- Serve immediately with extra sauce spooned over each portion.
- Pair with steamed jasmine rice or a light salad.
