  • 1 tablespoon Sesame oil
  • 1 small Red chili, thinly sliced — adjust to taste

Method
 

Preparation
  1. Rinse the fish fillets under cold water to remove any surface residue.
  2. Pat them completely dry with paper towels.
  3. Season both sides of the fish with salt and black pepper, and let the fillets sit for a minute.
Sauce Preparation
  1. In a small bowl, combine soy sauce, fish sauce, lime juice, and sesame oil.
  2. Whisk until smooth and slightly glossy.
  3. Taste the sauce. Adjust saltiness with lime or smoothness with sesame oil as needed.
Steaming Setup
  1. Fill a large pot with about an inch of water and place a steaming rack inside.
  2. Bring the water to a gentle simmer over medium heat.
  3. Ensure the water does not touch the fish directly.
Layering
  1. Place the seasoned fish fillets on a heatproof plate that fits inside your steamer.
  2. Tuck ginger slices around the fish.
  3. Pour the whisked sauce evenly over the fillets.
Steaming
  1. Lower the plate onto the steaming rack, cover the pot with a tight-fitting lid, and steam for 8 to 10 minutes.
  2. Check doneness by testing with a fork; the fish should flake easily.
Garnishing
  1. Carefully lift the plate out of the steamer using oven mitts.
  2. Scatter the sliced red chili and chopped coriander over the top while warm.
