Feta Phyllo Pockets

Crispy on the outside and warm and melty on the inside, these feta phyllo pockets are a quick and impressive snack or appetizer.

Ingredients
  

Main Ingredients
  • 8 sheets phyllo dough sheets, thawed Keep covered to prevent drying out.
  • 8 ounces feta cheese, block style Block feta holds together better than crumbled.
  • ¼ cup unsalted butter, melted For brushing between phyllo layers.
  • 2 tablespoons olive oil Mixed with melted butter for brushing.
  • 2 tablespoons honey For drizzling on top before serving.
  • 1 tablespoon sesame seeds For garnishing.
  • ¼ teaspoon black pepper For seasoning.
Optional Add-Ins
  • 1 cup chopped fresh spinach Mixed with feta.
  • 1 tablespoon fresh dill, parsley, or oregano Stirred into the feta.
  • ½ cup chopped sun-dried tomatoes For added flavor.
  • 1 teaspoon red pepper flakes or diced jalapeño For heat.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Line a baking sheet with parchment paper.
  3. Keep your phyllo sheets covered with a damp kitchen towel to prevent drying out.
Assembling the Pockets
  1. Lay one sheet of phyllo on a clean surface and brush lightly with melted butter.
  2. Place a second sheet on top and repeat brushing with butter.
  3. Cut the buttered layers into portions suitable for wrapping feta.
  4. Place a piece of feta in the center, fold the phyllo over to wrap snugly, and seal the edges.
  5. Place the pockets seam-side down on the prepared baking sheet.
Baking
  1. Mix remaining melted butter with olive oil and brush over the tops of each pocket.
  2. Bake for 15 to 18 minutes or until golden brown, rotating the pan halfway through.
Serving
  1. Drizzle with honey and sprinkle with sesame seeds and black pepper before serving.

Notes

These pockets can be assembled ahead of time and refrigerated before baking. They can also be frozen before baking and cooked from frozen.
