Preparation
- Preheat the Oven to 350°F (175°C) and line two standard 12-cup cupcake pans with paper liners.
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
Making the Batter
- In a large mixing bowl, whisk melted butter and sugar until smooth. Add eggs one at a time, whisking well after each. Then add vanilla.
- Alternative adding dry ingredients and buttermilk: start with flour, then half the buttermilk, and repeat until just combined.
- Fold in the sprinkles gently without overmixing.
Baking
- Fill each cupcake liner about two-thirds full. Tap pans to release air pockets, bake for 14-17 minutes, and cool in the pan for 5 minutes before transferring to a wire rack.
Making the Frosting
- Beat softened butter for 3 minutes until fluffy. Slowly add powdered sugar, salt, and vanilla, beating until smooth. Gradually add cream to achieve desired consistency.
- Frost cooled cupcakes and top with extra sprinkles.
Notes
Use jimmies for sprinkles to avoid color bleeding. Allow butter and dairy ingredients to reach room temperature for best results. Don't overmix the batter to avoid dense cupcakes.
