Ingredients
  

For the Peach Filling
  • 6 cups fresh peaches, peeled and sliced (about 6 to 7 medium peaches)
  • 3/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
For the Biscuit Topping
  • 1 1/2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon coarse sugar, for topping (optional)

Method
 

Preparation
  1. Wash your peaches under cool water. Fill a pot with water and bring it to a rolling boil on the stove. Drop the peaches in for about 30 to 40 seconds, then scoop them into a bowl of ice water.
  2. Peel the peaches, pull out the pits, and slice each into wedges roughly half an inch thick. Place the sliced peaches in a large bowl, add sugar, flour, lemon juice, cinnamon, and salt. Stir gently and let it sit for about 10 minutes.
Biscuit Topping
  1. In a separate bowl, whisk together flour, sugar, baking powder, and salt. Add the cold cubed butter and work it into the flour until it resembles coarse crumbs.
  2. Pour in the milk and vanilla extract, then stir just until the dough comes together. Avoid overmixing.
Assembly and Baking
  1. Preheat your oven to 375°F. Lightly grease a 9x13-inch baking dish. Pour the peach filling into the dish and spread evenly.
  2. Drop dollops of the biscuit dough over the top of the peaches, leaving gaps. Sprinkle coarse sugar over the dough if desired.
  3. Bake for 30 to 35 minutes until golden-brown topping and bubbling juices are visible. Tent with aluminum foil if browning too fast.
Serving
  1. Let the cobbler rest for 15 minutes before serving. Serve warm, ideally with vanilla ice cream or whipped cream.

Notes

Choose peaches that give slightly when pressed. Keep the butter cold until mixing. Don't skip the resting time before serving. For variations, consider mixed berry peach cobbler or a gluten-free option.
