Ingredients
  

Dry Ingredients
  • 1 cup yellow cornmeal Use yellow cornmeal for better flavor and color.
  • 1/2 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp sugar (optional but highly recommended)
Wet Ingredients
  • 1 cup buttermilk (or regular milk) Buttermilk is preferred for tenderness.
  • 1 large egg
  • 2–3 tbsp melted butter or bacon grease Bacon grease adds smoky flavor.
For Frying
  • 1/4 inch vegetable or canola oil Used for frying.

Preparation
  1. In a large mixing bowl, combine the cornmeal, flour, baking powder, salt, and sugar. Whisk until evenly combined.
  2. In a separate bowl, whisk together the egg, buttermilk, and melted butter.
  3. Pour the wet mixture into the dry ingredients and stir until just combined. The batter should be thick.
  4. Heat enough oil in a skillet to reach 1/4 inch deep over medium heat for 3-4 minutes.
Cooking
  1. Drop spoonfuls of batter into the hot oil, flatten slightly, and fry in batches of 3-4 to avoid crowding.
  2. Fry undisturbed for 2-3 minutes on each side until golden brown.
  3. Remove with a slotted spatula and place on paper towels to drain excess oil. Serve hot.

Notes

Always use buttermilk if possible for the best flavor and texture. Rest the batter for 5 minutes before frying for improved results.
