- In a large mixing bowl, combine the cornmeal, flour, baking powder, salt, and sugar. Whisk until evenly combined.
- In a separate bowl, whisk together the egg, buttermilk, and melted butter.
- Pour the wet mixture into the dry ingredients and stir until just combined. The batter should be thick.
- Heat enough oil in a skillet to reach 1/4 inch deep over medium heat for 3-4 minutes.
Cooking
- Drop spoonfuls of batter into the hot oil, flatten slightly, and fry in batches of 3-4 to avoid crowding.
- Fry undisturbed for 2-3 minutes on each side until golden brown.
- Remove with a slotted spatula and place on paper towels to drain excess oil. Serve hot.
Notes
Always use buttermilk if possible for the best flavor and texture. Rest the batter for 5 minutes before frying for improved results.
