Preparation
- Slice the zucchini evenly into ½-inch rounds after trimming the ends.
- Set up your breading station with three shallow bowls: one for beaten eggs mixed with salt and pepper, one for flour, and one for breadcrumbs mixed with Parmesan cheese, salt, and pepper.
Cooking
- Heat about half an inch of canola oil in a skillet to 350°F.
- Dredge each zucchini slice in flour, then dip in the egg mixture, and finally coat with the breadcrumb mixture.
- Fry zucchini slices in small batches for 2 to 3 minutes per side until golden brown.
- Remove fried zucchini with a slotted spoon and place on a paper towel-lined plate. Sprinkle with extra salt if desired.
- Serve immediately with your choice of dipping sauce.
Notes
Fried zucchini tastes best fresh, but leftovers can be refrigerated for up to 3 days. Reheat in an oven or air fryer to keep it crispy. Avoid microwaving.
