  • 1 pound Lean ground beef
  • 1 packet Taco seasoning 1-ounce packet
  • 1/2 cup Water
  • 1 head Iceberg lettuce, shredded
  • 2 medium Tomatoes, diced
  • 1 cup Cheddar cheese, shredded
  • 2 cups Frito corn chips
  • 1/2 cup Salsa
  • 1/2 cup Catalina dressing

Method
 

Preparation
  1. Crumble the ground beef into a large skillet set over medium heat and cook for 8 to 10 minutes until browned.
  2. Drain any excess fat from the cooked beef.
  3. Sprinkle taco seasoning over the beef, add water, and stir to coat the meat before simmering for 5 minutes.
  4. While beef simmers, shred lettuce, dice tomatoes, and shred cheese if necessary.
Assembly
  1. Start with shredded lettuce as the base layer in a large mixing bowl.
  2. Add the warm seasoned beef over the lettuce followed by diced tomatoes and shredded cheddar.
  3. Sprinkle Frito corn chips on top and add any optional toppings you choose.
  4. Drizzle salsa and Catalina dressing over everything.
Serving
  1. Toss the salad with large tongs or spoons so that the dressing coats every layer evenly.
  2. Serve immediately and keep Fritos separate if prepping ahead to maintain crunch.

Keep Fritos separate until serving to preserve crunch and taste the seasoned beef before assembling to adjust seasoning as needed.
