  • 2 tablespoons fresh lemon juice or lime juice Freshly squeezed for best flavor.
  • 1/2 teaspoon vanilla extract

Method
 

Preparation
  1. Freeze your strawberries properly; use fully frozen strawberries for best texture.
  2. Chill the coconut milk in the refrigerator for at least 2 hours before using.
  3. Measure and prepare all remaining ingredients and have them ready.
Blending
  1. In a blender, add the chilled coconut cream, followed by lemon juice, vanilla extract, and powdered sugar.
  2. Add the frozen strawberries and blend until completely smooth and thick.
  3. Taste and adjust sweetness or flavor if necessary.
Serving
  1. Transfer the mixture to a piping bag and pipe into serving cups for a classic swirl.
  2. Garnish with sliced strawberries, whipped cream, and mint before serving.
  3. Serve immediately for the best texture. If desired, freeze for 10-15 minutes for a firmer texture.
