Preparation
- Preheat your oven to 350°F (175°C) and prepare a 9x5 inch loaf pan with non-stick spray and parchment paper.
Mixing Dry Ingredients
- In a large mixing bowl, combine flour, baking powder, baking soda, and salt. Mix for about 30 seconds and then add the Fruity Pebbles, coating them with the flour mixture.
Mixing Wet Ingredients
- In a medium bowl, whisk together the eggs and sugar until pale and thickened, then add melted butter, milk, and vanilla extract. Whisk until smooth.
Combining Mixtures
- Pour the wet mixture into the dry ingredients and gently fold together until no dry flour remains. Add optional chocolate chips or sprinkles if desired.
Baking
- Pour the batter into the prepared pan, top with extra Fruity Pebbles, then bake for 55 to 60 minutes, or until a toothpick comes out clean.
Cooling
- Let the bread cool in the pan for 15 minutes, then transfer to a wire rack to cool for another 20 minutes before slicing.
Notes
Use room temperature ingredients for better texture. Make sure the butter is cooled before mixing. Leftovers can be stored at room temperature for up to 3 days or frozen for up to 2 months.
