  • 2 tablespoons all-purpose flour Can substitute with almond flour for a gluten-free option.
  • 1/2 cup unsalted butter, softened Can substitute with coconut oil for a dairy-free option.
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 12 ounces white chocolate, chopped Use good quality chocolate to avoid graininess.
  • 14 ounces sweetened condensed milk Can substitute with evaporated milk mixed with sugar.
  • 2 cups Fruity Pebbles cereal Plus extra for topping.

Method
 

Preparation
  1. Add the flour to a microwave-safe bowl and heat it for 1 minute to heat-treat the flour.
  2. Break the white chocolate into small, even pieces and place in a microwave-safe bowl. Heat in 15-second bursts, stirring after each until smooth.
  3. In a separate bowl, combine softened butter, sugar, and vanilla extract. Whisk until light and fluffy.
  4. Pour melted white chocolate into the butter mixture and gently stir to combine. Add heat-treated flour and fold gently.
  5. Stir in the sweetened condensed milk until the mixture is smooth with no visible milk streaks.
  6. Fold in the Fruity Pebbles gently to avoid crushing them.
Setting and Serving
  1. Line an 8×8-inch dish with parchment paper and pour in the fudge mixture, spreading it evenly.
  2. Sprinkle extra Fruity Pebbles on top.
  3. Chill in the refrigerator for at least 1 hour until set.
  4. Lift out the fudge using the parchment paper and cut into 2-inch squares using a sharp knife.

Notes

For best results, use good quality white chocolate, melt slowly, and let the fudge chill fully before cutting.
