Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon ground nutmeg
Wet Ingredients
  • 2 large eggs
  • 1/4 cup heavy whipping cream
  • 3/4 cup whole milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons salted butter, melted
  • 2 tablespoons vegetable or canola oil (for the batter)
Frying Ingredients
  • 3 inches vegetable oil or shortening for frying
  • powdered sugar for dusting

Method
 

Preparation
  1. Set up your frying station. Choose a deep, heavy-bottomed pot and pour in vegetable oil or shortening to reach about three inches deep. Heat the oil over medium-high heat to 375°F.
  2. In a large bowl, mix the dry ingredients: all-purpose flour, salt, baking powder, granulated sugar, and ground nutmeg until clump-free.
  3. In a medium bowl, whisk the eggs until foamy. Add heavy whipping cream, whole milk, vanilla extract, melted butter, and vegetable oil, and whisk until smooth.
  4. Pour the wet ingredients into the bowl with dry ingredients. Fold gently until just combined, avoiding overmixing.
  5. Test the oil temperature with a thermometer or drop a bit of batter into the oil. It should sizzle and rise immediately.
Frying
  1. Drop portions of batter into the hot oil using a tablespoon or small cookie scoop. Fry in small batches of five or six at a time.
  2. Fry for a total of about 60 seconds, flipping halfway until golden brown. Be attentive; they can overcook quickly.
  3. Drain the bites on paper towels and let them sit for a minute before dusting.
Serving
  1. Dust the bites generously with powdered sugar right before serving. Serve them warm for the best taste.

Maintain oil temperature and fry in small batches for best results. Serve immediately for optimal crispiness.
