  • 1 pound ground chicken
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs Use gluten-free if necessary.
  • 1/4 cup finely chopped parsley
  • 3 cloves garlic, minced Fresh garlic preferred.
  • 1 large egg, beaten
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup milk Adjust if using lean turkey.
  • 2 tablespoons olive oil
  • 1/4 cup shredded mozzarella cheese Optional, for topping.

Preparation
  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a large mixing bowl, add the ground chicken, Parmesan, breadcrumbs, parsley, minced garlic, egg, oregano, salt, and pepper. Pour in the milk.
  3. Mix everything together by hand, but do not overmix to avoid a dense texture.
  4. Split the mixture into four equal portions and shape them into individual loaves.
  5. Arrange the loaves on the prepared baking sheet, drizzle olive oil on top, and space them out.
  6. Bake for 25 to 30 minutes. If using mozzarella, sprinkle it on during the last 5 minutes of baking.
  7. Check for doneness with a meat thermometer, which should read 165°F (74°C).
  8. Let the loaves rest for 5 minutes before slicing.

Notes

Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months. Reheat gently to maintain moisture.
