Ingredients
  

For the Dip
  • 10 ounces fresh spinach, chopped (or frozen spinach, thawed)
  • 8 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup Parmesan cheese, freshly grated
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons Parmesan, for topping Optional for a crispy finish

Method
 

Preparation
  1. If using fresh spinach, heat a splash of oil in a large pan over medium-low heat. Add the chopped spinach along with a pinch of salt, and stir gently.
  2. Cover the pan with a lid and let the spinach cook down completely, stirring occasionally to prevent scorching. Once wilted and soft, transfer to a mesh strainer to cool.
  3. Squeeze out as much liquid as possible from the cooled spinach using your hands or a kitchen towel.
  4. If using frozen spinach, ensure it's fully thawed and squeezed dry before mixing.
Mixing
  1. In a large mixing bowl, add the softened cream cheese, sour cream, and mayonnaise. Stir in the minced garlic, grated Parmesan, salt, and pepper until fully combined.
  2. Fold in the prepared spinach until evenly distributed throughout the mixture.
Baking
  1. Preheat the oven to 350°F (175°C) and grease a small baking dish.
  2. Spread the spinach mixture evenly into the dish, smoothing the top with a spoon.
  3. Sprinkle the reserved Parmesan cheese on top, if using. Bake for 20 minutes until edges are bubbly and the top has light golden spots.
  4. Let the dip rest for a few minutes before serving.

Notes

Squeeze the spinach dry to avoid a watery dip. Use freshly grated Parmesan for the best flavor. Soften cream cheese before mixing to ensure a smooth texture. This recipe can be doubled for larger gatherings.
