  • 2 cups cooked, shredded chicken Rotisserie chicken is recommended for convenience.
  • 1 cup long-grain rice, uncooked
  • 2 cups chicken broth
  • 1 cup milk
  • 2 cups fresh green beans, trimmed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 1.5 cups shredded cheddar cheese
Optional Add-Ins
  • Diced bell peppers or carrots, for extra color
  • Red pepper flakes, for a spicy kick
  • Fresh parsley, chopped, for garnish
  • Brown rice, instead of long-grain, for a nuttier bite

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) for 10 minutes.
  2. In a large mixing bowl, combine the cooked, shredded chicken, uncooked rice, chicken broth, milk, chopped onion, minced garlic, dried thyme, paprika, salt, and pepper. Stir until evenly distributed.
  3. Grease a 9x13 inch baking dish and pour the chicken and rice mixture into the dish, spreading it evenly.
  4. Arrange the fresh green beans on top, pressing them gently into the mixture.
Baking
  1. Cover the baking dish tightly with aluminum foil and bake for 45 minutes.
  2. After 45 minutes, remove the foil and sprinkle the shredded cheddar cheese evenly across the top.
  3. Return the dish to the oven uncovered for another 15 to 20 minutes until the cheese is bubbly and golden.
Serving
  1. Let the dish rest for about five minutes before serving.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat gently.
