Preparation
- Preheat your outdoor grill to medium-high heat (around 400°F or 200°C) or set a stovetop grill pan to high heat.
- Pat the chicken breasts dry with paper towels. Drizzle with olive oil and season with Italian seasoning, garlic powder, kosher salt, and black pepper. Rub the seasoning into the chicken.
Grilling
- Place the seasoned chicken breasts on the hot grill. Cook for 6-7 minutes on the first side without moving, then flip and cook for another 5-6 minutes, checking for an internal temperature of 165°F (74°C).
- About 60-90 seconds before the chicken is done, lay fresh mozzarella slices over each piece and close the lid to melt the cheese.
- If desired, grill sliced tomatoes for 60-90 seconds per side for added flavor.
Serving
- Let the chicken rest for 3-5 minutes before serving, allowing the juices to redistribute.
- Assemble by laying the chicken on a serving platter, topping with grilled or fresh tomato slices, and scattering fresh basil. Drizzle with balsamic glaze.
- Finish with a sprinkle of flaky sea salt and fresh black pepper. Serve immediately.
