  • 1 32-ounce bag tater tots Use straight from frozen, no thawing needed.
  • 1 teaspoon olive oil For cooking the ground beef.
  • 1 pound ground beef Can substitute with ground turkey or chicken.
  • 1 1-ounce package taco seasoning To flavor the ground beef.
  • 2 cups shredded cheddar cheese For topping the totchos.
  • Salsa For serving.
  • Shredded lettuce For serving.
  • Pickled jalapenos For serving.

Method
 

Preparation
  1. Preheat your oven to 425°F and line a large baking sheet with parchment paper.
  2. Arrange the tater tots in a single layer across the prepared baking sheet.
  3. While the tots bake, heat olive oil in a skillet over medium-high heat.
  4. Add the ground beef and cook until no pink remains, breaking it apart with a spatula.
Cooking
  1. Stir in the taco seasoning and a quarter cup of water into the cooked beef, then let it simmer until the liquid absorbs.
  2. Bake the tater tots for 28 to 30 minutes until golden brown and crispy.
  3. Spread the cooked ground beef over the baked tater tots, then sprinkle the shredded cheddar cheese on top.
  4. Slide the baking sheet back into the oven for about 5 minutes until the cheese melts.
  5. Remove from the oven and add your desired toppings, such as salsa, shredded lettuce, and pickled jalapenos.
  6. Serve immediately while hot and crispy.

Notes

Leftovers can be stored in an airtight container for up to 3 days. Reheat in the oven to restore crispiness.
