Preparation
- Whisk together the pineapple juice, soy sauce, brown sugar, garlic, ginger, ketchup, rice vinegar, and sesame oil in a medium bowl.
- Pat your chicken thighs dry with a paper towel, then place them in a shallow dish or zip-top bag.
- Pour about two-thirds of the marinade over the chicken and reserve the rest in the fridge.
- Let the chicken marinate at room temperature for at least 20 minutes or up to 8 hours in the fridge.
Cooking
- Heat a large skillet over medium-high heat and drizzle a bit of oil.
- Sear the chicken thighs for about 4 to 5 minutes on each side until golden brown.
- Pour the reserved marinade and fresh pineapple chunks into the skillet, and lower the heat to medium.
- Simmer for 10 to 12 minutes, spooning the sauce over the chicken occasionally.
- Make sure the chicken reaches an internal temperature of 165°F before removing it from heat.
Serving
- Let the chicken rest for 5 minutes before serving.
- Garnish with sliced green onions and sesame seeds before serving.
