Preparation

- Whisk the flour, sugar, baking soda, and salt together in a large mixing bowl.
- Add the eggs, crushed pineapple with juice, and vanilla extract to the dry mixture. Stir until smooth.
Baking
- Pour the batter into the prepared pan and spread evenly. Bake for 30 to 35 minutes until golden and set.
- Cool the cake completely in the pan before frosting.
Frosting
- Beat the softened cream cheese until smooth. Gradually mix in powdered sugar and then vanilla.
- In a separate bowl, whip the cold heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until fully combined.
- Spread the frosting evenly over the cooled cake.
Garnish
- Add your choice of toasted coconut, chopped pecans, or maraschino cherries on top. Chill for at least 1 hour before serving.
