Ingredients
  

Energy Bites
  • 1 cup rolled oats
  • 1/2 cup natural peanut butter or almond butter Use natural nut butter with no added sugar
  • 1/3 cup honey Acts as a binder
  • 1/2 cup dark chocolate chips
  • 2 tablespoons chia seeds
  • 1 teaspoon vanilla extract
Greek Yogurt Parfait
  • 1 cup plain Greek yogurt (full-fat or low-fat)
  • 1/2 cup mixed berries (fresh or frozen, thawed)
  • 3 tablespoons granola Choose a low-sugar option
  • 1 teaspoon honey For drizzling
Apple Slices with Almond Butter
  • 2 medium apples (any variety)
  • 4 tablespoons natural almond butter
  • 1 teaspoon cinnamon Optional for dusting
Roasted Chickpeas
  • 1 can chickpeas, drained and rinsed (400g / 15oz)
  • 1.5 tablespoons olive oil
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cumin
  • Salt and black pepper To taste

Method
 

Energy Bites
  1. In a large mixing bowl, combine rolled oats and nut butter.
  2. Add honey and vanilla extract, then mix well.
  3. Stir in chocolate chips and chia seeds until evenly combined.
  4. Refrigerate the mixture for 30 minutes.
  5. Roll the chilled mixture into golf ball-sized bites.
  6. Refrigerate for another 15 minutes before serving.
Greek Yogurt Parfait
  1. Spoon Greek yogurt into a glass or bowl.
  2. Layer mixed berries over the yogurt.
  3. Sprinkle granola on top and drizzle with honey.
Apple Slices with Almond Butter
  1. Wash and core the apples, then slice into wedges.
  2. Arrange apple slices on a plate and serve with almond butter.
  3. Sprinkle with cinnamon if desired.
Roasted Chickpeas
  1. Preheat the oven to 200°C (400°F).
  2. Rinse and pat dry chickpeas.
  3. Spread chickpeas on a baking tray and drizzle with olive oil, spices, and seasoning.
  4. Roast for 25 to 30 minutes, tossing halfway through.
  5. Cool completely before serving.
