Honey Lemon-Glazed Salmon Salad

Ingredients
  

For the honey-lemon dressing
  • 1/4 cup Honey
  • 3 tablespoons Fresh lemon juice Use fresh lemon juice for better flavor.
  • 3 tablespoons Olive oil
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
For the salmon
  • 4 pieces Salmon fillets, about 6 ounces each
  • 2 tablespoons Olive oil, for the skillet
For the salad
  • 6 cups Romaine lettuce, chopped
  • 1 cup Cherry tomatoes, halved
  • 1 cup Cucumber, diced
  • 1/2 cup Shredded cheese, feta or cheddar

Method
 

Preparation of Dressing
  1. Whisk together the honey, lemon juice, Dijon mustard, salt, and pepper in a medium bowl. Slowly drizzle in the olive oil while whisking continuously until the dressing is glossy and slightly thickened.
Cooking Salmon
  1. Heat a large skillet over medium-high heat and add the 2 tablespoons of olive oil. Let it heat for a minute until shimmering.
  2. Pat the salmon fillets dry with a paper towel and place them skin-side down in the skillet. Cook undisturbed for 4 to 5 minutes.
  3. Flip the fillets carefully and cook the other side for about 1 minute. Pour half of the honey-lemon dressing over the salmon and let it simmer for 2 to 3 minutes, basting occasionally.
  4. Remove from heat and let the salmon rest in the pan for 3 minutes.
Assembly
  1. Spread the chopped romaine lettuce on a serving platter. Top with cherry tomatoes, cucumber, and shredded cheese.
  2. Place the rested, glazed salmon fillets on top of the salad and drizzle with the remaining honey-lemon sauce before serving.

Notes

Pat the salmon dry for the best crust. Assemble the salad just before serving to maintain crispness. Store leftovers separately in airtight containers.
