- Toss the prepped potatoes in olive oil in a large bowl.
- Pour the honey mustard glaze over the potatoes and toss until fully coated.
- Spread the potatoes in a single layer on a baking sheet, cut-side down where possible.
Cooking
- Roast potatoes in the preheated oven for 25 to 30 minutes, flipping halfway through.
- Look for deep golden-brown edges and tender texture.
- Keep an eye on them during the last few minutes to prevent burning.
- Let the potatoes rest for about three minutes after removing from the oven.
- Garnish with fresh chopped parsley and serve warm.
