Method
Building The Tomato Sauce
- Preheat your oven to 375°F (190°C).
- Heat the olive oil in a skillet over medium heat until it shimmers slightly. Add the chopped onion and cook for 3 to 4 minutes, stirring occasionally, until it turns soft and translucent.
- Stir in the minced garlic and cook for another minute, just until it turns fragrant.
- Add the diced tomatoes and tomato paste, then stir in the oregano, basil, salt, and pepper. Let the sauce simmer for about 10 minutes, stirring occasionally.
- Taste and adjust seasoning if necessary.
Assembling The Dish
- Pour the finished tomato sauce into a greased baking dish or individual ramekins.
- Use the back of a spoon to create four small wells in the sauce. Crack one egg into each well.
- Sprinkle the shredded mozzarella and grated Parmesan evenly over the sauce and eggs.
Baking The Eggs
- Place the assembled dish into your preheated oven and bake for 15 to 20 minutes.
- Broil for the last minute or two for a golden top, if desired.
Letting It Rest And Serving
- Let the dish sit for a minute or two before serving.
- Garnish with fresh basil leaves and serve immediately.
