Ingredients
  

For the sauce
  • 1 tablespoon Olive oil
  • 1 small Yellow onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 can (14.5 ounces) Diced tomatoes
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • Salt and black pepper, to taste
For the eggs and cheese
  • 4 large Eggs
  • ½ cup Shredded mozzarella
  • ¼ cup Grated Parmesan
For garnish
  • Fresh basil leaves
  • Crusty bread, for serving (optional)

Method
 

Building The Tomato Sauce
  1. Preheat your oven to 375°F (190°C).
  2. Heat the olive oil in a skillet over medium heat until it shimmers slightly. Add the chopped onion and cook for 3 to 4 minutes, stirring occasionally, until it turns soft and translucent.
  3. Stir in the minced garlic and cook for another minute, just until it turns fragrant.
  4. Add the diced tomatoes and tomato paste, then stir in the oregano, basil, salt, and pepper. Let the sauce simmer for about 10 minutes, stirring occasionally.
  5. Taste and adjust seasoning if necessary.
Assembling The Dish
  1. Pour the finished tomato sauce into a greased baking dish or individual ramekins.
  2. Use the back of a spoon to create four small wells in the sauce. Crack one egg into each well.
  3. Sprinkle the shredded mozzarella and grated Parmesan evenly over the sauce and eggs.
Baking The Eggs
  1. Place the assembled dish into your preheated oven and bake for 15 to 20 minutes.
  2. Broil for the last minute or two for a golden top, if desired.
Letting It Rest And Serving
  1. Let the dish sit for a minute or two before serving.
  2. Garnish with fresh basil leaves and serve immediately.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 2 days. Reheat gently in the oven.
