- Wash each zucchini thoroughly, slice in half lengthwise, and scoop out the center, leaving a quarter-inch border.
Cooking the Filling
- Heat a large skillet over medium-high heat, add ground turkey and diced onion, and cook for 8-10 minutes until turkey is golden brown.
- Sprinkle garlic powder, dried oregano, salt, and pepper over the cooked turkey mixture, stir well.
- Pour in marinara sauce and let simmer over low heat for 2-3 minutes.
Assembling the Boats
- Fill each zucchini half generously with the turkey and marinara mixture, then sprinkle with grated Parmesan cheese.
Baking
- Cover the baking dish with aluminum foil and bake in a preheated 400°F oven for 20-25 minutes.
- Remove foil for the last 5-10 minutes to brown the cheese.
Serving
- Let the zucchini boats rest for 5 minutes before serving, optionally garnish with fresh herbs.
